exploration ships probably would often not be part of the military anyway, so it would depend on the corporation funding the expedition as to what they would name it. SF authors are indeed possible. Same goes for transports and freighters.
To be honest there are conventions for naming of classes of ship today, and they're still broken some of the time.

There are some bassic rulez refering to the ship naming that we use(or used to use since nobody seems to care).
That naming system is still used in all of the official canon missions as far as I know.
As for non Greek/Roman mytho titles, JMS said that Clark himself was steering away from that kinda stuff and leaning towards more down-to-Earth names. See the "jms speaks" section of Severed Dreams on The Lurker's Guide for more info.
You're bound to see exceptions to the rule, but from the show it would appear the vast majority of Omega-class warships are named after the Greek and Roman mythological figures.
A lot of the names I see around here would be perfect for regular FreeSpace 2 missions since the theme of Earth history, military history in particular, is generally the same.

For the Explorers you shouldn't forget:
EAS Copernicus
EAS Galileo
And maybe you could make some medical ships (for example Asimov with other textures)
EAS Pasteur
EAS Esculab
Omega:
EAS Dyonisos (<-- god of wine --> good name for party ship )
EAS Diana (no not the english princes)
EAS Aphrodite (not really a good name for a military vessel)
EAS Jupiter
EAS Mars
EAS Neptue
EAS Poseidon
EAS Triton

Aphrodite's a great name fro a military ship. In mythology, she is one spiteful mean bitch. (An for those few days a month-**** nothin would get near that ship.)

I know that ships from B5 are named like Roman or Greek gods or Heros but B5: Crusade: Brothers in Arms showed us that there are still Nations on Earth like the Russian Federation, so ships COULD named after ohter things like Gods and Heros. There are not enough gods out there to fit for all the user made missions.

There's no way you can convince me that an Olympus rates a "cruiser" title. Even a light one.
