Are you sure that your .tbl files are hidden? By default all the diretories in data are empty.
Ships.tbl isn`t originally found in data/tables that's just where you put modified versions. The original version lives in root_fs2.vp and you'll need VPView (or neimad's viewer ) to get at it.
