Favourites eh?
This thread's a little old but oh well:

Capitals:
Terran - Leviathan ; it's easy pickings but those 4 AAAf Beams are pretty nasty
Vasudan - Sobek Corvette (coolest ship in FS2)
Shivan - Demon (rare capital ship, but the best looking Shivan, I don't care for the Ravana at all. Lillith is also a nasty one)

Fighters:
Terran - Perseus
Vasudan - Horus Interceptor
Shivan - Mara is prolly the hardest one

Bombers:
Terran - anything with a turret is nice
Vasudan - not really familiar with their bombers
Shivan - Tauvri (always seem to use those damn Piranhas); looks kinda cool

Around the engine module, those turrets are supposed to be AAAf.

It's just that most of the time those AAAF beams aren't freed up in the mission. Such as in the mission where the Colossus is introduced, the Leviathan there only has its main cannon free. Though I mission I just made has 'em free, luckily the ship is on your side.

Anywho, the best ship every is the GTB Tamnanki. I'd show you why, but I'll keep it locked up in TVWP for a little while.

Wow - That's the second non English FS2 forum I've run into in the past month - I'm starting to realize that the FS community is actually a fair bit bigger than I used to think - It's just all damned near undecipherable

And we've had (and still have) people postinmg on the major English FS boards with far worse english than you seem to have
