Only problem was that the shadows had a habit of killing everything. They didn't leave witnesses behind until they started moving openly. From there it wasn't long before the crew on B5 figured out that you could jam them with telepaths so you only really have a small window during which you can have the shadow battlecrabs show up and still leave you alive without them being defeated.
Now skirmishes with scouts and spitfires are a different matter. You can have the player win those (as long as you say that the player is one of those few people who can know about the shadows)

Witnesses were only left on two occasions until they started to move openly and these were G'Kar's Frazi and Keffer's black box. That's it.
It doesn't stop there being other missions with survivors where the pilots are "not in range" to get a clear scan of the situation and therefore not get a clear sight/scan of what caused the destruction.

You forgot about Keffer's previous contact with a battlecrab in "A Distant Star". In fact, the ship passed within range of several ships and didn't open fire at all. Thanks to the distortions in hyperspace and its own technical problems, the Cortex didn't get any readings from the shadow cruiser, but still... it didn't shoot at anyone. Kind of a close encounter of the ancient kind.

And when Sheridan went to Z'ha'dum the Shadows came to B5. But didn't destroy it. Why? because they figured Sheridan was dead. Why bother with the sausage floating around some supposedly dead planet in a middle of nowhere?
Of course the Sahdows usually tried to work in secret, and their attacks were often meant to frame someone (Narn Cantauri), so leaving witnesses... well no good. But it doesnt mean Shadows go in to a killing frenzy every time there is purple rays in the air.
In Crusade when the thief chick (Durena or some such) found her people. They told how Shadows had destroyed their transport, but many eascape pods survived. Would you think that Shadows would have been capable of destroying every last one of them? Crab can even fly in athmosphere, so that would have not been the problem. It just wasn't worth all the trouble.
Anyway... I'm not going to get any crabs killed in my missions. Spitfires perhaps, but crabbys...

Both events occured AFTER the shadows started moving openly. Before that they were VERY careful to not be spotted and certainly not spotted doing anything as hostile as blowing up capital ships.

And by the way. I am curious. How do you know when Dureenas people were shot down? Do you just assume it, or do you have solid info?

Dureena's planet was destroyed by the shadow planet killer. The planet killer only appeared in Season 4, after the shadows started moving openly (and the vorlons for that matter).
In A Call To Arms, Dureena blamed Sheridan for not saving her people. He later says that his resources were spread too thin to help her or something like that. In fact I believe he says words to the effect that the shadows attacked her planet very close to the end of the war (While he was setting up for the vorlon attack on Coriana 6).

When Excalibur goes to get the weird EA labrat dudes from the planet. Dureena finds out the there is her people down there. Their transport was shot down by Shadows.

Well I was assuming they only got attacked by the shadows once. If they were attacked more than once the first attack could have been at any time.
