I cant believe Ive been missing out!
Well, I just acquired Freespace 2 and all I have to say is that I feel like an anal crinkle for not getting the game when it first came out. This think ROCKS! It will take a bit to get used to the controls and stuff, but it will be worth it.
Does anyone recommend going to a joystick or using the keyboard and mouse?

Depends on what you feel is more comfortable, I always use mouse/keyboard....

I prefer to use a joystick. I find that having the twist rudder as part of the stick is a definate help. Makes it much quicker to perform maneuvers.

Twist rudders are cool if they're not absurdly sensitive, so you start doing half a barrel roll when you're just trying to jink to the left.
I have a Precision Pro, IMO that twist is pretty good. Best twist was on my old Sidewinder 3D Pro, but that might be nostalgia 
At home I've got a Wingman Digital Extreme which has a very 'twitchy' twist-action but if you take a flathead screwdriver and rotate a screw 90 degrees (the screw's in the base of the stick) it disables the twist action physically, so you can have the best of both. Pretty slick, IMO.
