Well, 2 of them are obviously freighters, the one in the back is the Cotton Fleet tender, but the one in the middle, what type of ship is that?

It's Excaliburs Ark Royal class escort carrier, here's the specs that come with the LW model.

2 Minbari-hybrid gravametric engines

To cut down on cost and project maximum power, Earth Force commissioned the Ark Royal Class Escort Carrier. Due to the heavy losses in recent years, Earth Force has had to construct as many ships as fast as possible, but replacing heavy ships like the Omega and Warlock Class Destroyers can get expensive very fast. The solution was to build lighter ships that packed a lot of punch. The Ark Royal class is mainly used to escort convoys and make quick hit and run attacks, freeing bigger ships for more important duties.

Using technology recently acquired from the Minbari, the Ark Royal class is as powerful as the old Hyperion Cruisers, but is less than half the size. It also includes artificial gravity for the crew, making long deployments possible.

When needed, the fighters can be replaced by half a dozen Marine Assault Craft. The Assault Craft can deploy 1500 EA Marines and all their needed equipment too a planet surface in just a few hours.
