Question about the Omega.
Are we planning on having rotating midsections on these ships like the show or are they going to be stationary? I beleave it can be done looking at some of the stock freespace 2 ships.

They rotate, yes. Rotating section on Omega actually plays double role: they are good mousetraps.

One ship in FS2 has a rotating section too (or atleast in FS1)

Actually quite many FS2 ship (and FS1) has rotation section, all radar dish and so on.

As Mr Fury states yes it does rotate and it can trap a unwary fighter

Ahh so we also will be flying cute little white ships too? j/k
Thanks, was kinda worried when i downloaded the demo pack and found that none of the ships had rotating midsections. 
Here is another question, do the demo missions contain the actual babylon 5 models and all, or do I need to download different files for mission creation.

I believe these are not actual model used by the show but replicas made by the very talented modelers of The Babylon Project. These models you can use in your own custom made missions using FRED.

You don't need to download any special materials to make your own missions. Just open up FRED2 and you're in (see your manual if you don't know how to do this). 
The EA Orion space station, which is included in R1, is nearly all rotation. Unfortunately, you only see it in one mission and then only from an extreme distance. It seems to get overlooked rather often.

Indeed FREDing is easy and fun, there is always good old tutorial and if I remember correctly our good friend Mr. Fury hided my TBP version somewhere in his site.
I agree its most unfortunately that Orion wasn't seen much on R1 campaign, because its beautiful (well on some perspective). I tried to show it more in Tale of EAS Janus, but sadly it appeared more as destroyed than operational
