We already should know that Vorlon's are energy like beings, highly evolved but not so many knows what Shadows really are.

I couldn't find the original message from JMS itself, but I try to tell it:

Shadows decided to evolve different way, someway they manipulated their own DNA. Shadows wanted to become different than they would normally have become.

As their name suggests... they are shadows that have physical form. They can come and go as they want, they are shadows. But because they have physical form, they can be harmed and killed.
